Heat oil and margarine in a saucepan, add teh onions and cook for 5-7 minutes until soft. Reduce the heat and stir in balsamic vinegar brown sugar and bay leaves. Continue to cook until the onions are a rich golden brown about 20 minutes. Remove the bay leaves and season to taste with salt and pepper. Preheat oven to 400 F. Cook the polenta according to the package directions. While hot, stir in the peppers, onions, parsley, and thyme. Check the seasoning. Oil a 9" round springform pan or a deep flan dish. Press the polenta mixture into the pan and let cool. Combine the ingredients for the topping, season to taste, and spread over the top of the polenta. To serve, back at 375 F for 20 minutes until the top as browned.
