tart with carmelized garlic from Plenty

Blind bake pastry at 350 then turn down oven to 325
Carmelized Garlic
1. Put cloves in small saucepan and cover with plenty of water.
2. Bring to a simmer and blanch for 3 minutes, then drain well.
3. Dry saucepan, then return cloves to it and add olive oil.
4. Fry garlic cloves on high heat for 2 minutes.
5. Add balsamic vinegar and water and bring to boil, then simmer gently for 10 minutes.
6. Add sugar, rosemary, thyme, and about 1/4 teaspoon salt.
7. Continue simmering on medium flame for 10 minutes, or until most of the liquid had evaporated and the garlic cloves are coated in a dark caramel syrup. Set aside.
Custard
1. While garlic is caramelizing, whisk together eggs, cream, creme fraiche, 1/2 teaspoon salt and some black pepper.
Assemble
1. Break both types of goat cheese into pieces and scatter in the tart shell.
2. Spoon the garlic cloves and syrup evenly over the cheese.
3. Pour egg custard over the tart filling to fill the gaps, making sure that you can still see the garlic and cheese over the surface.
4. Cook
5. Place tart inside 325 oven.
6. Bake for 35-45 minutes (up to an hour), or until the tart filling has set and the top is golden brown.
