A easy side dish for any time of year.
Strain 2 cups of plain yogurt in fridge for 1 and 1/2 to 2 hours, or use Greek yogurt. Add sugar, orange zest, juice, nutmeg and salt and stir until smooth.
Shred carrots and add raisins to yogurt. Toss to mix well. Cover and chill 20 to 30 minutes. Just before serving sprinkle with 3 tablespoons of chopped almonds, cashews or pecans.
