Suggest a better description1. Bone and score the chicken thighs. Cut into 2/3" squares and marinate with salt, rice wine, soy sauce, water, and cornstarch for 20 minutes.
2. Cur red pepper into 2/3" squares, and chop green onions 1/2" long.
3. Heat 1/3 cup of oil. Sir-fry green onion for 15 seconds. Add chicken. Quickly stir-fry chicken for 2 minutes. Then add red pepper, stir for another 1/2 minute. Turn off heat. Add cashew nuts. Mix well and serve hot.
PS: Almonds, walnuts, pecans, or peanuts can be used as a substitute for cashews.
