Mix milk with hot sauce. Layer catfish filets in milk in single layer. Cover and refrigerate up to 8 hours. Mix cornmeal with next 5 ingredients. Set aside.
Let catfish sit at room temperature for 10 minutes. Dredge in cornmeal mixture.
Pour oil, 1 1/2 cups, or desired amount, into skillet (cast iron works well.) Fry filets in batches, 2 minutes on each side until browned. Drain filets on paper towels. Keep warm is 225* oven until ready to serve.
