2 . Steam Cauliflower to crisp tender (~5mins); transfer to bowl
3. 1 T oil saute leeks 3mins. Add flour, cook -- stirring 1 minute.
4. Slowly stir in broth & half-and-half
5. Simmer ~4 mins till thickened & pour over cauliflower
6. Add 1/2 of cheese, toss.
7. Transfer to shallow baking dish (2 Qt) & cover tightly w/ foil -- Bake 25 mins
8. In bowl mix: bread crumbs, horseradish, remaining cheese.
9. Sprinkle over cauliflower, drizzle remaining EVOO and top w/ prosciutto
10. Bake 15 - 20 mins till golden brown.
