Like the chai I first tasted in Tanzania in 1989! Hot, sweet, and spicy
Bring water, milk, and spice to a boil. Simmer two minute. Remove from heat and add loose tea leaves. Steep about 3-4 minutes, then strain out the tea leaves.
At this point you may wish to stir the hot milk into two whipped eggs and return the mix to the stove to cook into a custard or eggnog. After removing the custard from the heat, You may wish to add a few almonds or almond slices to deepen the flavor.
When ready, add honey to taste. Serve hot to warm the soul...or chill to drink as eggnog.
Give the spice and milk enough time to meld favors, but don't let the tea sit long enough to turn bitter!
