Cheddar cheese puffs
Bring 1 cup water and 1 stick butter to simmer until butter melts. After melted and foam subsides add 1 cup flour and stir over low heat until it forms a ball. Transfer to kitchen aid mixer -- add one egg at a time and process until incorporated X 4. If still really thick beat a 5th egg and add in increments until batter is smooth. Add cheese -- for kids probably cheddar. Start with 1 cup (shredded) and add to taste. Salt pepper to taste. You can do this in the mixer or by hand. Scoop out onto baking sheet in balls and bake at 400 until golden (18-22 minutes). I'd make them that day, if you do them the day ahead they need to be toasted
