Preheat the oven to 180 C, 350 F, Gas Mark 4. Lightly butter the bread. Remove the crust from the bread and cover 4 slices with cheese and the sliced toamtoes. Season with salt and pepper. Place the remaining bread on top and press down lightly. Break the eggs into a bowl and whisk. In a medium sized frying pan gently heat the olive oil. Dip 2 of the sandwiches into the egg mxiture and coat both sides. Fry quickly in the oil for 40 seconds each side. Repeat the process for the remaining toasties. Place on an oven tray and flash in the preheated oven for 2-3 minutes. Remove and slide onto plates. Serve immediately. NOTES : Very simple and delicious way to enjoy a cheese and tomato sandwich your children can prepare.
