Made with 100% gluten free corn
1. In a bowl, combine the milk and the lightly beaten eggs. Season with salt and pepper. Gradually add the P.A.N. Pre-cooked White Cornmeal and blend. Next, add the grated potatoes and the potato puree. Mix until a smooth but firm dough is formed.
2. Add half of the bacon and the cheese. Blend until all of the ingredients are thoroughly combined.
3. Melt the butter in a pan and add a little bit of oil.
4. Shape the dough into disks and fry on both sides until golden.
5. Remove and place on a heat-resistant tray. Top with the other half of the cheese and bacon.
6. Bake until the cheese is melted.
7. Serve with a dollop of sour cream and chopped chives.
