This recipe is from my grandmother's recipe file, clipped from a newspaper a long time ago
Preheat oven to 350. Boil water and butter in saucepan until butter is melted. Remove from heat and add flour and salt all at once. Stir vigorously with a wooden spoon until mixture leaves sides of pan. Add eggs, one at a time, beating well after each addition. Add cheeses and mix thoroughly.
Refrigerated cheese mixture for 3 to 5 days or wrap in plastic wrap and freeze. Form into balls with greased hands or drop by teaspoons onto baking sheet. Bake at 350 degrees 15 minutes or until lightly browned. If desired, drop puffs into deep oil heated to 395 degrees and cook until lightly browned. Serve hot. Makes about 6 dozen appetizers.
