Suggest a better descriptionPrepare a 7 inch spring-form pan by fitting a parchment paper circle in the bottom and adding height to the pan by adding a ring of parchment paper around the inside of the circle.
Mix graham crumbs, butter, and sugar. Press into prepared pan. Bake for 10 minutes. Let cool on a wire rack.
Whip the cream cheese until soft. At a low speed, add sugar and egg yolks (3 at a time). (Over mixing at this point will cause the cake to crack). Add sour cream, lemon juice, and vanilla until blended.
In a separate bowl, mix egg whites until stiff. Fold both mixtures together and pour into prepared pan.
Bake for 70 minutes at 275F with a pan of water on the lower rack. (The pan of water will prevent cracking.) Increase the temperature to 300F and bake for another 10 minutes. (Try to resist opening the oven to check on the cake. This will cause the cake to fall.)
Rest on a rack at room temperature to cool. Cool completely in the refrigerator for best results.
Can be refrigerated for 5-6 days.
OPTIONAL
For a chocolate cheesecake, add 3 ounces of melted chocolate before adding to pan.
For a flavoured cheesecake, remove 1/4 of the mix and add flavouring (it is not recommended to use a thin liquid such as berries). To the pan, add 1/2 the plain mix, all of the flavoured mix, and top with remaining 1/2 of the plain mix.
If icing, ensure icing is at room temperature and cheesecake is cold to make sure you do not damage the cake.
