Preheat oven to 375
Heat 3 tablespoons of oil in skillet over med-high heat until rippling. Season beef with salt and pepper, increase heat to high and cook for 3 minutes, flip and cook two more min then transfer to bowl.
In same skillet, heat remaining 1/4 cup olive oil over medium. Add peppers and onions, season with salt and pepper, and cook over med-high stirring until softened. About 8 min.
Place the bottom of rolls on a large rim baking sheet, and top with beef and veggies. Sprinkle with cheese, bake for 6 minutes.
Transfer to platter and cover with roll top.
