A hearty breakfast casserole of eggs, hash browns, 3 cheeses and whatever else you want to throw in there.
Preheat oven to 350 degrees. Grease a 9x13 baking dish.
Heat oil in a skillet and add chopped onion, red pepper, and anything else you want to add such as sausage or bacon. Cook until the mixture is evenly browned.
Transfer to a large bowl. Stir in potatoes, cottage cheese, cheddar, gruyere and eggs. Transfer to baking dish and bake for 50 minutes. Allow to stand 10 minutes before serving.
