Delicious cheesecake made in 9 x 13 cake pan, this is my favorite Christmas dinner dessert
Spray a 9 x 13 cake pan with nonstick cooking spray. Preheat oven to 350.
In large bowl, stir together flour and brown sugar. Cut in softened margarine with a pastry blender until fine crumbs form. Stir in chopped walnuts. Set aside 1 cup for topping. Press remaining crumb/walnut mix into bottom of pan. Bake 15 min. at 350 or until lightly browned.
Beat together cream cheese, white sugar, eggs and vanilla. Pour on hot baked crust. Spread pie filling evenly on this and sprinkle remaining walnut/crumb mix on top. Bake another 15 min. at 350. Cool on rack. Refrigerate leftovers.
Variation: instead of 1 1/2 cups walnuts, use 1 cup walnuts and 1/2 cup shredded coconut. IMO this is even better but the rest of my family hates coconut :(
