Sear the meat for 1 minute in butter and season with salt and pepper.
Remove the meat and cook the shallot in butter.
Add in the pan the chestnuts and shortly after the cream.
Put the stove on low heat and simmer for a few minutes.
At the end, put back the meat in the pan and wait a few minutes more.
