Preheat oven to 325 degrees.
Lightly grease and flour 2 large cookie sheets and set them aside. (I use butter only, no flour - but lots of butter - this gives them a really nice butter crust on the bottom).
If you like the coconut less prominent, chop it up some before using (I do chop it up in a food processor - 5 seconds on high).
In large mixing bowl, beat egg whites until stiff but not dry.
Beat in vanilla.
In a separate bowl, mix together remaining ingredients.
Fold into egg whites.
Form into balls (size up to you) and place onto prepared cookie sheet. I usually press down a little on the bottom and form the top into a little bit of a triangle shape. You want it to look a little pyramid-y in shape.
Bake about 30 minutes - start watching it at 25 minutes - could take up to 35 minutes. You want a golden brown top.
Remove from the pan onto a cooling rack right away or they will stick.
Let them sit for at least 20-30 minutes - they will firm up and be much better than if you serve them right out of the oven.
