* Preheat oven to 350 degrees and coat a baking sheet with cooking spray.
* Pound chicken breast to 1/4 inch thickness and sprinkle both sides with Italian seasoning,
* Place one slice of cheese and one slice of pepperoni on each chicken breast, roll up each breast and place a toothpick to secure.
* Dip the chicken in the egg beaters and roll in bread crumbs to lightly cover.
* Bake for 30 minutes or until done.
