Suggest a better description1. Heat oven to 350 degrees. Prepare a 3 quart casserole dish with nonstick cooking spray.
2. Dice chicken into bite sized pieces. In a skillet heat oil then add in diced chicken. Cook chicken in skillet until cooked through then season with taco seasoning.
3. Cook rice according to package directions. Once cooked, add to a large mixing bowl and mix rice with queso, half and half, green chilies and minced onions.
4. Place rice mixture into your prepared casserole dish then top with the cooked chicken and shredded cheese.
5. Place in the oven to back 20-25 minutes or until cheese is melted and casserole is warm throughout.
6. Remove from oven to serve. Optional serve garnished with fresh diced cilantro.
