In nonstick skillet, heat oil; sauté garlic, onion, spinach, and mushrooms until softened. Spoon evenly over breasts; sprinkle with cheese. Roll up and fasten with toothpicks.

Place chicken in baking dish; pour in stock. Cover and bake for 10 minutes or until chicken is no longer pink. Move chicken to serving dish and keep warm.

SAUCE: Meanwhile, in small saucepan, melt margarine; sauté garlic for 1 minute. Stir in tomatoes and chicken stock; cook for 3 minutes or until heated through. Serve over chicken.
