A casserole that will warm you up on a cold night. Lots of cheese makes this yummy.
Cook broccoli and cauliflower according to package directions. Preheat oven to 350 degrees F (175 degrees C). Prepare rice according to package directions. Set aside.
Cube chicken breasts and cook in a large skillet. Add celery and onion with butter. Cook until soft.
In a medium saucepan over low heat, mix cheese soup, cream of chicken soup, and 1 1/4 cups water. Gradually stir in cheese until melted. Be careful not to burn the cheese.
In a large mixing bowl, combine broccoli, rice, soup and cheese mixture, chicken, celery and onion. Season with salt and pepper. Pour mixture into a 9x13 inch baking dish. Cover with tinfoil.
Bake in the preheated oven for 45 minutes, until bubbly and lightly brown. Remove foil last 10 minutes if you want top browned.
