Cut raw chicken into ~1 1/2 inch square chunks. Heat oil in non-stick frying pan and add chicken. Cook until all sides have changed color. Add onions, pepper slices, and garlic. Saute until onions become transparent. Add entire can of tomatoes, salt, pepper, oregano, basil, and thyme and bring to a boil. Let simmer covered for 15 mins and then uncover and simmer for 15 mins more to reduce the liquid. Add cornstarch to 2 Tbsp of cold water and stir into chicken mixture until liquid thickens.
