Suggest a better descriptionSprinkle the chicken with the salt and pepper. Heat 2 teaspoons of olive oil in a large non-stick skillet set over medium-high heat. Add the chicken and cook until browned, 3-4 minutes on each side. Transfer the chicken to a plate.
Heat the remaining olive oil in the same skillet. Add onion, and garlic, cook string occasionally until softened, about 3 minutes. Add the peppers, mushrooms, fennel, oregano, and cayenne. Cook stirring occasionally until softened 5-6 minutes. Return the chicken to the skillet, add the marinara, and bring to a simmer. Cook covered until the chicken is cooked through, about 20 minutes.
