Chicken & Green Pepper served over Rice
1. Salt & pepper chicken
2. Brown chicken pieces in olive oil.
3. Add green pepper slices. Cook peppers with chicken until peppers are tender-crisp.
4. Place chicken and green pepper mixture in the bottom of a 8 x 8 baking pan coated with olive oil.
5. Spread half of BBQ sauce on top of chicken mixture.
6. Place 1/4 cup to 1/2 cup of the pineapple tidbits on top of the BBQ sauce.
7. Spread the other 1/2 of the BBQ sauce on top of the pineapple tidbits.
8. Bake mixture in 400 degrees oven for 25 minutes.
9. While mixture is baking, pour pineapple tidbit juice into a measure cup. Add soy sauce and mix in the cornstarch.
10. After mixture has baked, add juice mixture & bake another 7 minutes or until sauce thickens.
11. Serve over rice.
