Chicken, Ham and Leek pie, served with some lovely veggies...
1. Boil the chicken in a pan of water for 25 minutes
2. Chop the ham and slice the leeks
3. Mix the cornflour with a little of the milk
4. On a lightly floured surface, roll out the pastry (about 4-5mm thick)
5. Place the rest of the milk, the cream, the nutmeg, salt and pepper in a saucepan
6. Once the chicken has boiled, keep the water (the stock), but take out the chicken
7. Add the stock (500ml) to the sauce saucepan and bring to the boil
8. Add the cornflour and milk mixture and stir
9. Cook the white sauce for about 5 mins, using a whisk to beat the sauce gently, till smooth and glossy.
10. Take off the heat and allow to cool a little
11. Chop the chicken, then place a third of the chicken in a large ovenproof dish and sprinkle with 1/3 of the leeks and the ham (repeat twice)
12. Pour the sauce over the filling
13. Lay the pastry over the pie filling, press the edges down lightly and cut off any excess pastry.
14. Cut a small hole in the middle of the pie to allow steam to escape (you can now decorate the pie with the leftover pastry if you wish, but it isn't a 'must')
15. Brush the pastry with a little milk
16. Bake in a pre-heated oven (200C) for about 60 mins, till nice and golden
17. Ten minutes before the end cook some vegetables of choice such as Broccoli, Peas and Sweetcorn
18. Let the pie rest for a few minutes before slicing
