In a medium zip close plastic bag, combine 1 tablespoon of the oil, the vinegar, garlic powder, salt, pepper, ginger and paprika. Gently shake the bag to mix, then set aside.
Carefully cut the chicken breast in half lengthwise through the center to create two thin halves. Place the chicken in the bag with the marinade, seal the bag and shake to ensure the meat is coated.
Set aside for 15 minutes.
Slit burger buns in half. Use ge remaining tablespoon of oil to lightly coat the cut sides of each bun, and both sides of onion slices.
Remove chicken from the marinade, discard the marinade.
Heat a grill pan over medium high heat. Lightly coat pan with cooking spray, add onion slices and chicken. Grill about 5-6 minutes. Flip the chicken and cover the pan, reduce heat and grill another 3-4 minutes.
Grill the buns.
Mix 1!tblsp mayonnaise and 1 tblsp mango chutney and spread over bottom half of bun.
Top with lettuce, tomato, 1 piece of chicken and onion.
