Low fat non-breaded version
Pre heat oven to 350. Blot chicken dry,season heavily with S&P, and garlic powder: brown chicken on both sides in olive oil. Put in casserole dish and pour sauce over chicken and cover. Bake 30-45 min depending on size of breasts -thighs will take 30 min. Remove cover and sprinkle with a liberal handful of cheese and two handfuls go mozzarella cheese. Raise heat to 400 and bake 5 min more until cheese browns.
Serve with any pasta. Reheats well in microwave.
