Assemble the ingredients in a crockpot and heat until bubbling (you can also heat it on the stove). It usually takes about 4-5 hours on low in a crockpot – everything is cooked already so it only needs to be warmed. I use a 5.5 quart crockpot and this fills it almost to the top. You could easily half it if necessary.
Top with Monterey jack cheese and crushed tortilla chips just before serving.
