This is a basic recipe to use when you haven't saved bones. Make when whole chickens are on sale at the market.
Rinse and clean chicken. Place chicken in stock pot and cover with approximately 7 quarts water. Bring to a slow boil.... A little more than a simmer but not much. A white foam will appear, skim the foam and dispose.
While the chicken is "simmering" prepare aromatics.
