Serve in a burrito or over lettuce for a salad! 8hrs on low in crockpot. Serves 8-10
Put chicken in the bottom of the crockpot. Top with salsa, beans, corn and all the spices. 30 min before crockpot is done, take out chicken and shred. Place chicken back into crockpot and add rice. cover and continue cooking for last 30 min.
Serve in a burrito/taco or as a salad! Top with desired ingredients. (Cheese, sour cream, tomatoes, olives, hot sauce, cilantro, etc.)
