Suggest a better descriptionBoil water. Add salt, carrots, celery, onion, and chicken. Cover and simmer (do not boil) 2 1/2 to 3 hours or until chicken is tender.
Remove chicken from broth, debone, and keep warm. Strain broth and measure; add enough water to make 3 cups.
Return broth to pan and heat. Put water and flour into jar with lid and shake well until mixture is smooth. Add slowly to hot broth, beating with wire whisk to keep smooth. Cook about five minutes. Add chicken to gravy.
Make parsley dumplings and add to chicken/gravy 20 minutes before serving.
Parsley Dumplings:
Sift together flour, baking powder, and salt. Add chopped parsley. Cut in shortening until mixture looks like coarse cornmeal. With fork, stir in milk to make soft dough; stir as little as possible.
Drop by spoonfuls into chicken/gravy. Simmer 10 to 15 minutes uncovered; cover and simmer on very low heat 10 to15 minutes longer.
Mom’s Way:
I use boneless chicken breasts cut into bite size pieces and saute veggies in a little butter first, add chicken, saute until no longer pink. (leave veggies in), then add chicken broth, and/or water and chicken cubes to add up to about 6 cups of fluid. then simmer about an hour. Add the milk and flour mixture, stirring, not whisking. Simmer 10 to 15 minutes, stirring often.
If I don't have time to make the scratch dumplings, I use Jiffy Baking mix, or Bisquik, follow the directions on box for dumplings, except add about 1/4 to 1/3 cup more milk (it will be thin) let sit for a few minutes, then add by spoonful slowly to simmering gravy. It is really important to simmer the 10 to 15 minutes uncovered, then cover with well fitting lid (no vents) and simmer on very low heat for 10 to 15 minutes without opening lid. Remove from heat, but let set covered for a few minutes, then open, stir and serve.
