Recommended side dish: Sautéed Garlicky Green Beans
1. Melt 1 Tbsp butter in a large skillet over medium heat; add pecans, and cook until toasted. Remove from skillet.
2. Pound chicken to ¼-inch thickness; season lightly with salt and pepper, and dredge in flour.
3. Cook chicken in hot oil in skillet over medium heat 3 to 4 minutes per side or until done. Remove from skillet.
4. Add broth to skillet, and cook 2 minutes, scraping browned bits from bottom of pan with a wooden spoon.
5. Add vinegar, sugar and thyme; cook 3 minutes or until sauce is slightly thickened. Whisk in 1 Tbsp butter.
6. Serve chicken with sauce and pecans.
