Season chicken breasts with salt & pepper & set aside.
In large skillet, add 1 tbsp. olive oil & heat over medium highheat. When the pan is hot, add chicken & cook about 4 minutes on each side until browned. Remove it onto a plate.
Add sliced mushrooms and remaining tablespoon of olive oil to the skillet and saute for 5 minutes. Mushrooms should look moist & dark. Once cooked, remove them from the skillet.
Prepare sauce:
Add butter to the skillet and allow it to melt, then cook garlic in it until slightly browned - only a couple of minutes. Add 1 tablespoon flour and cook until it's no longer raw. Slowly addchicken broth & heavy cream. Once simmering, add parmesan cheese & allow it to blend for 2-3 minutes. Add salt, garlic powder, & pepper. Taste the sauce and adjust seasoning if necessary; may add lots more parmesan for a cheesier taste. Add spinach and allow it to wilt.
Add cooked mushrooms back to the skillet & mix into the sauce.
Add cooked chicken and allow it to reheat for 2-3 minutes; close the lid to help the heat stay in.
Serve immediately, spooning sauce over the chicken.
