I got this recipe from my brother-in-law. It makes a good hearty meal, perfect for winter. And the potato chip crust makes it enticing for kids!
- cook rice . . . while cooking . . .
- mix remaining ingredients in casserole dish, add rice and mix all together, crush potato chips and sprinkle on top, put in oven at 350 degrees for ~30 minutes.
- if you want the chips brown on top, after cooking set to broil for another 2-3 minutes
- let cool for 5-10 minutes before serving, hot, hot ! !
