Suggest a better description1. Combine spices (EXCEPT CILANTRO: served on the side)
2. Combine carrots, celery, onion, garlic and ginger in a pot
3. Add some vegetable broth and cook 10 mins
4. Stir in spices (Except Cilantro)
5. Add broth, quinoa, diced tomatoes (with juices)
6. Simmer for 15 mins
7. Stir in chickpeas and coconut milk
8. Turn off heat and let sit for 10 mins.
9. Season with salt and pepper
10. Serve
