Quick and easy hamburger, beans and cheese casserole with a Mexican flavor. Kids love it and hungy men do too!
Preheat oven to 350 degrees. Peel and dice onion, in large skillet saute onion in canola oil on medium heat until tender. Add ground beef and brown, drain out any excessive oil left from browning. Add taco seasoning mix with a couple tablespoons of water so that the seasoning will mix well with the hamburger; remove from heat. In a rectangular casserole or baking dish (9x13, 2 inches deep), add cooked hamburger, can of pork and beans and broken up corn chips, stir until mixed evenly, then even out everything in the pan. Sprinkle the cheese on top of the hamburger/bean/corn chip mixture. Place on top rack of oven and bake for approximately 30 minutes, or until heated completely through and cheese has melted to your desire. Serve with a salad.
