Adapted from the Silver Palate Cookbook
1. Heat olive oil in a large pot. Add onion and cook over low heat, covered, until tender and translucent, about 10 minutes.
2. Crumble sausage meat and ground chuck into the pot and cook over medium-high heat, stirring often, until meats are well browned. Spoon out as much excess fat as possible.
3. Over low heat, stir in black pepper, tomato paste, garlic, cumin, chili powder, mustard, salt, basil and oregano.
4. Add tomatoes and beans. Stir well and simmer, uncovered, for another 15 minutes.
5. Tate and correct seasoning. Simmer for another 5-10 minutes to heat through, and serve immediately.
Offer sour cream, chopped onion, and grated cheddar cheese to garnish.
