Suggest a better descriptionSort, wash, and soak beans in filtered water overnight. Drain. Add beans in water to cover by 1 inch along with khombu, celery ribs, and 1/2 onion. Bring to rolling boil for 1 minute; reduce heat and simmer until beans are tender (check package directions). Add water as needed. When tender, add salt to taste; spoon off extra liquid and simmer with the lid off as necessary to get the right amount and consistency of gravy.
In a large soup pan, brown ground beef over medium high heat until no longer pink. Add chopped onion, celery, garlic, and seasonings and sautee until celery is just tender. Add cooked beans and diced tomatoes. Adjust seasonings and continue simmering 30-45 minutes. Better the next day after the flavors have married.
