Deep fried appetizers

Chop lean pork loin in 1 inch x 1/4 inch pieces.
Chop shrimp in small bite size pieces
Chop mushrooms in small bite size pieces
Chop onions in small bite size pieces
Chop water chestnuts in small bite size pieces
Finely shred cabbage
Shred ginger in zester tool
SET ASIDE READY TO COOK
Sauce:
Soy, Sesame Oil and Corn Starch mixed
SET ASIDE READY TO COOK
Melt bacon grease in large skillet.
Add chopped onion and cook
Add chipped mushrooms and cook
Add water chestnuts and mix
Add pork and shrimp and cook
Add salt and pepper and ginger - mix
Add cabbage and cook
Add sauce and cook until thickened
Add package of Alfalfa Sprouts - mix and cook until all of the mixture is blended and soft.
Remove from heat and let cool 20 minutes.
Assemby
Take one spring roll wrapper and place 2 tablespoons of mixture in center of wrapper, fold side left over the mixture sides then roll.
Seal outside edge of roll with water.
Set aside and go to next until all mixture is used.
Mix hot mustard with water and prepare for serving.
Cooking:
In a deep fryer until wrapper is crisp. Be careful they are hot.
Serve with hot mustard and sweet and sour sauce.
Plumb wine is necessary for the cook. ABSOLUTELY!!!!!!!!
