Suggest a better description1. Preheat the oven to 200°C/Fan 180°C/Gas 6. Line a baking tray with a silicone mat or foil.
2. For the sauce, halve the plums, remove the stones then cut each half into 4 pieces. Place in a small pan with the star anise, Sichuan pepper, garlic, ginger, five-spice powder, wine vinegar, sweetener, sugar and water. Bring to the boil and simmer for 10 minutes or until the plums are softened and the liquid is reduced. Remove the star anise. Leave to cool slightly.
3. Tip the plum mixture into a small food processor and blend until smooth. Transfer to a bowl and season with the soy sauce and a little salt and pepper if needed.
4. To prepare the chicken thighs, rub them all over with the five-spice powder, season well with salt and white pepper and spray all over with oil. Place the chicken thighs on the lined tray and cook on a high shelf in the oven for 40-45 minutes or until browned and cooked through and the surface is a bit crispy.
5. Place the pancakes in a steamer over a pan of boiling water and warm through for a few minutes. Shred the chicken with 2 forks; discard the bones and any sinew.
6. Serve the pancakes, chicken, cucumber and spring onion on plates with the plum sauce. Assemble as you would duck pancakes at your local Chinese...
