cherry trifle with cherry brandy and chocolate custard, adapted from Nigella Lawson
Make jam sandwiches with the cherry jam. Layer on the bottom of large trifle bowl. Pour over the cherry brandy. Top with the drained, canned/bottled. cherries. Cover with cling wrap and leave to macerate.
Melt chocolate on low heat in microwave.
In a saucepan warm milk. Whisk together egg yolks, sugar, and cocoa in large bowl. Pour warm milk and cream into the bowl, whisking them into the mixture. Stir in the melted chocolate.
Rinse the saucepan and pour everything back into it. Cook over medium heat, stirring constantly until it thickens--seriously thickens. Do not let it boil. Once thickened, put in a bowl and cover with plastic wrap. Chill in fridge.
Pour cold custard over jam sandwiches. Cover with cling wrap and chill overnight.
When ready to serve, cover with whipped cream. Grate chocolate over top.
