Makes about 20 cookies.
Method:
1. Cream together the butter and sugars until pale and fluffy.
2. Mix together the egg and vanilla and beat into the butter mixture.
3. Add the flour, oats, baking powder and salt and fold in gently.
4. Then add the chocolate chips and fold them in too.
5. Line baking sheets with parchment. Arrange heaped tablespoons of the mixture about 5cm (2inches) apart, as the cookies spread during cooking.
6. Chill the cookies in the freezer for 10 to 15 minutes, or in the fridge for 30 minutes. Preheat the oven to 180°C/Gas Mark 4.
7. Bake for 12 minutes until golden around the edges. Leave to cool slightly on the baking sheets, then transfer to wire racks to cool completely.
