Place rice into Micro Pressure Cooker
Add remaining ingredients and stir to combine
Cover with lid and cook in the microwave at 600 watts for 18 minutes
Remove from microwave and allow to rest until depressurised
Serve warm with a drizzle of coconut milk and honey/maple syrup, along with fresh berries and toasted coconut flakes
For a chilled pudding, divide mixture between 4 glasses and place into the fridge to set. Just before service top with coconut milk, berries, honey/maple syrup and toasted coconut flakes.
To avoid milk skin forming while chilling, cover the surface of the pudding with plastic wrap or baking paper.
