separate eggs and place yolk and white in separate bowls - cover and chill egg white -
in a medium bowl stir together flour, cocoa powder and salt
in large mixing bowl beat butter with an electric mixer and add sugar - beat and scrape sides add in egg yolk, milk and vanilla until combined
beat in flour mixture until combined
cover and chill for about 2 hours
preheat over to 350 degrees and lightly grease cookie sheet with butter
filling - in heavy saucepan cook caramels and whipping cream over low heat until smooth
lightly beat the egg white
place pecans in a small bowl
shape dough into one inch balls and dip in egg white and roll in pecans - place balls one inch apart on greased cookie sheet and press thum into centre of each ball
bake for 10 minutes - if middle puffs push down with measuring spoon
spoon filling into the whole
in another suavepan cook chocolate pieces and shortening over low heat until melted - drizzle over cookies
