Cook pasta according to instructions
Meanwhile, crack eggs into a bowl. Season and add parmesan and mix together with fork.
Just before pasta is ready, increase heat in pan so that the oil and fat starts to sizzle
Drain pasta thoroughly, return to pasta pan and immediately stir in egg mixture and the chorizo fat
Stir vigorously so the eggs cook evenly
Serve immediately with more parmesan
OPTION: thinly slice a leek and fry that gently for 6-8m in the oil before adding the chorizo, then continue as written
Add 1/2 tsp paprika to the egg mix
