A festive side dish good for people (like me) who aren't especially fond of carrots
Put all of the ingredients (except most of the butter, if used) into a pan and bring to the boil.
Reduce the heat, cover and simmer for 25-30 minutes until the carrots are cooked.
Scoop out the carrots and set aside, then boil and reduce the remaining liquid for 15-20 minutes or so, whisking in the remaining butter at the end.
Remove the star anise and ginger, return the carrots to the pan to re-heat and serve
