2. How to make chrysanthemum bread
Step 1: Put 5g of yeast in a cup, then add 200ml of warm water from 35-38 degrees Celsius, then add 20g of sugar to the above mixture and stir well, until the yeast floats like crab bricks.
Step 2: Add flour, salt, 40g sugar, 2 eggs, yeast mixture, vanilla essential oil, 70g butter, unsweetened fresh milk into the bowl and mix well.
Step 3: Use your hands to knead the dough mixture until it sticks. Then, knead the dough using the Folding and Strectching technique. First, fold the dough and then use the back of your hand to press and push the dough away. Next, rotate the dough 90 degrees and repeat the above two steps for about 10 minutes. Next, add 30g of butter and repeat the above kneading action for another 20 minutes until the dough forms a uniform, smooth, elastic mass. When you press on the dough, you will see the dents bulge again.
Step 4: Put the dough in a bowl with a thin layer of cooking oil, turn the dough so that the outside of the dough is covered with cooking oil. Next, use cling film or a damp towel to cover the bowl of dough and let it rise for about 50-90 minutes depending on room temperature until it doubles in size.
Step 5: When the dough has doubled in size, press it to let the air in the dough escape. Next, knead the dough again for about 2 minutes and then shape the dough into a ball. To style it into a chrysanthemum, weave 3 strands alternately together like a braid and then put it into the mold. Then, put the dough in a bowl, cover with a towel, and let it rise a second time at room temperature until it doubles in size.
Step 6: After the dough has been proofed a second time, use a brush to gently brush the remaining beaten egg onto the surface of the cake. Finally, arrange almond slices on top.
Step 7: Preheat the oven for 15 minutes before baking. To bake the cake, put the cake in the oven in the middle rack, spray water on the oven bar above the cake, and bake the cake at 175 degrees Celsius for about 25-30 minutes. If the cake surface is too yellow, use foil to cover the cake surface. Next, take the cake out of the oven, let it cool and you can cut the cake to use immediately.
3. Some notes when making chrysanthemum bread
Chrysanthemum bread needs to be made in a cool environment, not too warm, the ideal temperature is about 20-24 degrees Celsius.
You should buy yeast specifically used in cakes to bring out the butter flavor. If you make light yeast, the cake will have a faint smell of wine.
Do not use water instead of milk because it will make the cake no longer flexible and the inside of the cake will become dry and hard.
Note that when brushing with egg, you need to be gentle, do not press hard, to avoid causing the cake dough to collapse. Just apply a thin layer of egg, don't apply too thick.
Chrysanthemum bread is sweet, soft and delicious with a distinctive buttery smell. Uneaten cakes can be covered and kept in an airtight container or ziplock bag for 3-4 days. If you keep it in the freezer, it can be stored for 1 month. When you eat it, defrost it in the refrigerator and then put it in the microwave to warm it up a bit. The cake will be delicious and not dry or hard.
The way to make chrysanthemum bread above is very simple and can be easily done at home. Good luck!
