- Do all prep: chop garlic, chop shallots, chop parsley, bring out all remaining ingredients
- In a large pot bring 1 gallon of water to a boil with 2 tablespoon of salt
- In a small pot warm the chicken broth and clam juice
- In a very large frying pan on medium high heath, melt butter with olive oil
- Add shallots and red chili flakes, stir and cook for ~ 2 minutes
- Add garlic, black pepper, and 1/2 teaspoon salt, stir and cook for ~1 minute.
- Add the flour, stir in and cook 1-2 minutes.
- When the pasta water reaches a boil, add linguini. Cook at a boil 9-10 minutes al dente or a little less. Will finish cooking in a pan.
- Deglaze the shallot mix with the wine. Bring to a boil
- Add the chicken broth/clam juice mix to the pan and stir in.
- Add the clams to the sauce, stir and cook until just before the pot boils. Reduce heat tot low to hold until the pasta is ready. Adjust salt/pepper
- When the pasta is ready, add the parsley or basil to the sauce, stir in then add the pasta to the sauce. You can add the pasta straight from the pot to the sauce. Stir together. Reserve a cup of pasta water to thin out if too thick.
