700 grams of low-protein flour
200 grams of butter (Wijsman brand recommended)
300 grams of Hollman
100 grams of powdered sugar
4 egg yolks
26 grams of milk powder
15 grams of cornstarch
1 kilogram of homemade pineapple jam
Glaze:
3 egg yolks
2 teaspoons of cooking oil
2 teaspoons of condensed milk/ UHT milk
Instructions:
1. Combine butter, powdered sugar, and egg yolks in a bowl.
2. Mix until well combined for about 1 minute.
3. Add cornstarch and milk powder, stir gently until evenly combined. Then gradually add the flour, knead with a spatula until the flour is evenly incorporated.
4. Take a sufficient amount of dough, flatten it, then place a round portion of pineapple jam in the center. Shape it into a ball again, arrange it on a baking sheet until all the dough is used up. Then bake at 130 degrees Celsius for about 40 minutes or until the bottom is golden brown (adjust according to individual oven).
5. Remove the pineapple tarts from the oven and let them cool. Once completely cooled, brush the tops with the mixed egg yolk.
6. Repeat the brushing process 2-3 times, or as desired, then let it dry before baking again for another 20 minutes.
7. Remove the pineapple tarts from the oven, let them cool, and store them in an airtight container.
