1. Place a 3 quart pot over high heat. Add curry powder, cumin and coriander in the pot and cook for 1 minute, stirring constantly.
2. Lower the heat to med-high, add the remaining soup ingredients, except the broccoli and cilantro and cook for 10 minutes, stirring occasionally.
3. Add broccoli and cook for 5 minutes stirring occasionally.
Prepare Broiled Tofu
1. Heat oven to High Broil. Place the tamari, oil and water on a small baking sheet and stir well.
2. Add the tofu and stir until all is evenly coated.
3. Broil for 10 minutes, carefully stirring a few times to ensure even cooking.
Add tofu to soup pot and cook for 5 minutes, stirring occasionally.
Add cilantro and stir well before serving.
VARIATIONS:
- you can roast the tofu instead of broiling
- you can omit the broiling process and add the cubed tofu along with the veggies
- Add 1 cup of chopped greens, such as bok choy, nettles, dandelion greens, arugula or spinach along with the cilantro
- try tricolored cauliflower
- replace tofu with chickpeas or your favorite bean
